Quality of some types of refined vegetable oils marketed in Douala/Cameroon

Abstract

Refined vegetable oils are sources of energy, essential fatty acids, antioxidants, and fat-soluble vitamins. They help fight against malnutrition and cellular ageing. Poor conditions of extraction, refining, conservation and storage can alter their quality. The objective of this work was to analyze some quality parameters of 56 samples of vegetable oils marketed in Douala. This quality was assessed by the dosage of the acid and peroxide values; the determination of the water content and that of insoluble impurities. The methods used are those defined by Cameroonian Standard NC 77: 2002-03, REV.1. (2011) on vitamin A-enriched vegetable oils. The results show that: only 44.64 % of the samples had a conforming acid value, 62.50 % had a conforming peroxide value, 60.71 % had a conforming water content and no sample had a conforming insoluble impurities content. The quality of refined vegetable oils marketed in Douala is poor. The estimated level of compliance on their quality is 41.96 %. It is said to be influenced by inadequate conditions of extraction, refining, transport by ship and, to a small extent, storage conditions in the markets. Considerable efforts need to be made in addition to the achievements Cameroon has made in the field of food quality control.
